Perky's Nutty Power Bars
Ingredients:
1 cup Sunflower Butter or Nut Butter
3/4 - 1 cup Brown Rice Syrup
1/2 tsp Vanilla
1/8 tsp Salt
1 box Perky's™ Nutty Flax Cereal
1/4 cup Enjoy Life™ "Allergen-Free" Chocolate Chips
Optional: 1/4 cup Dried Fruit Pieces, 1/4 cup Seeds or Nuts,
1/4 cup Shredded or Flaked Coconut
Stir together first four ingredients in a small saucepan over
medium-low heat until melted. Place Nutty Flax, chocolate chips
[and optional ingredients, if using] into a large bowl. Add warmed
ingredients to bowl and mix well. Press into greased 8"x8" pan.
Let cool before slicing. Makes 12 bars.
Variation: Sprinkle an additional 1/4 cup chocolate chips on
top of bars and warm in 300 degree oven for three minutes.

Perky's Nutty Crumb Crust
Ingredients
1/2 cup butter or non-dairy alternative, softened
1/4 cup brown sugar
3 cups Perky’s Nutty Rice cereal
1/2 tsp vanilla
1/2 tsp salt
3 tbsp tapioca flour
1 tsp xanthan gum
3 tbsp fruit preserves (made from 100% fruit)
Preheat oven to 325°F. Grind Nutty Rice cereal in food processor until breadcrumb size. Transfer Nutty Rice to bowl and combine with other ingredients. Grease pie plate(s) and press Nutty Rice Cereal mixture into pan(s) making sure to cover bottom and sides. Bake crusts for 10-12 min at 325°F. Let cool before filling.
Makes 2 –8" pie crusts or 1 crust and optional topping*.
* Toast remaining mixture in a non-stick sauté pan until golden brown.
Sprinkle on top of a filled pie. |

Peach-A-Berry Pie:
Filling Ingredients:
4 ripe peaches, skin and pit removed.
1/2 cup fresh raspberries
Fruit Glaze Ingredients:
1/2 cup sugar
1-cup water or fruit juice
1/2 teaspoon Agar-Agar powder (gum)
1 tbsp. tapioca flour
Perky’s Nutty Crumb Crust
1 crust
Pie Assembly:
Bring water to boil in saucepan. Carefully add peaches and cook 1 minute. Immediately submerge peaches into ice water to stop cooking. When cool enough to handle, remove skin and pit and cut into slices. Layer the sliced peaches on top on prepared crust. Add raspberries.
Fruit Glaze:
Yields: 1 1/4 cup glaze
Blend the sugar, Agar, and tapioca together. Add the water or fruit juice until blended. Stirring constantly, over medium heat, bring to a boil. Reduce heat to a simmer and continue cooking for 1 minute. Cool slightly (about 1-2 minutes) and apply on top of fruit. Fruit should be nicely coated (may have glaze to spare).
Refrigerate 1 hour before tasting. Pie is best eaten the same day. |
Very Berry Cheesecake:
Filling Ingredients:
1 cup fresh blueberries
1 cup fresh raspberries
1-8 oz container cream cheese or substitute
2/3 cup sugar
1/4 cup eggs or substitute
1 tsp vanilla
1 tbsp milk (cow, rice, or soy)
Fruit Glaze Ingredients:
1/2 cup sugar
1 cup water or fruit juice
1/2 tsp Agar Agar powder (gum)
1 tbsp Tapioca flour
Perky’s Nutty Crumb Crust
1 crust
Filling:
Preheat over to 350°F. Combine cream cheese, sugar, egg, vanilla and milk. Blend until smooth. Pour blended pie filling into prepared crust and bake for 20 minutes. Let cool in refrigerator for 20 minutes.
Fruit Glaze:
Yields: 1 1/4 cup glaze
Blend the sugar, Agar, and tapioca together. Add the water or fruit juice until blended. Stirring constantly, over medium heat, bring to a boil. Reduce heat to a simmer and continue cooking for 1 minute. Cool slightly (about 1 minute). Spoon glaze over berries and gently toss to coat (may have glaze to spare). Spoon coated berries on top of the prepared pie.
Refrigerate 2-3 hour before eating. Pie is best eaten the same day.
Feel free to use other fruit too – like peaches or cherries. If using apples or pears, par-cook them first before adding the glaze. |

No Bake Marshmall-O Treats
Ingredients:
1 tablespoon Butter or Non-dairy Alternative
6 cups Miniature Marshmallows
1 box Frosted Perky-O’s™ Cereal
1/2 cup Enjoy Life™ “Allergen-Free” Chocolate Chips (optional)
Microwave butter or substitute and marshmallows in large bowl
for 2 minutes or until melted. Add Perky-O’s immediately and stir
well. Press mixture into a greased 8x8 pan using a greased spoon.
Sprinkle chips on top or melt in double boiler and drizzle. Cut into
squares when cool. Makes 12 treats.

Mini Apple-O Muffins
Ingredients:
2 cups Apple Cinnamon Perky-O’s™
1 1/4 cup White Rice Flour
1/2 cup Packed Brown Sugar
1 1/2 teaspoons Cinnamon
1 1/2 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1 teaspoon Salt
1/4 teaspoon Xanthum Gum
1 cup Applesauce
1/3 cup Milk (dairy, soy, or rice)
1 Egg or Egg Replacer Equivalent
3 tablespoons Oil
1 cup Chopped Apple (optional)
Preheat oven to 400 degrees. Combine dry ingredients in a large
bowl, using a fork to break up lumps; add Perky-O’s. In a separate
bowl, combine wet ingredients. Add dry mixture to wet, stirring
until just moistened. Spoon batter into greased mini muffin cups.
Decorate muffin tops with Perky-O’s. Bake 15 minutes or until
golden brown. Makes 24 mini muffins if you don’t eat any batter.
